Home Made Chicken Rice(Serves 2-3)
3 Chicken tights (skin, fats and bones removed – leave it whole)
Rice:
2 cups rice (wash and drain)
Pandan leaves (optional, tied up)
1 tsp sesame oil
Salt to taste
Marinate:
3cm ginger
6 cloves of garlic
1 lemongrass
1 tbsp cooking wine
½ tbsp sesame oil
1 teaspoon light soy sauce
Salt and Pepper to taste
Blend all ingredients for marinate together to form a semi-fine paste
Marinate chicken overnight or up to 3 days
Before cooking, scrapped off excess marinate paste from the chicken – you should be able to get a heap of it enough to fill a Chinese soup spoon.
Boil 4 cups of water. Once it starts boiling rapidly, place chicken into the water. Cook for 5 mins and off the fire. Let chicken remain in the hot water for 10 mins. Remove chicken and slice into big pcs. Keep the chicken stock.
Heat rice cooker with 1 tbsp of oil. When heated, stir fry the marinate paste that you have scrapped off from chicken earlier, for 1 min. Add in rice, salt, sesame oil and pandan leaves and stir fry until rice changes color ~ 3mins.
Pour in chicken stock and cook rice as usual.
After 10 mins, check rice and put chicken pcs onto the rice. Cover and continue cooking until done.
When the rice cooker auto ‘off’, leave the rice covered for an additional 5-10min.
Serve with chilli and vegetables for a complete meal.

Greenish With Roast Chicken
1 Serving of Roast Chicken Breast - Sliced (Leftovers are good too)
1 huge handful of mixed salad veg - rocket, cos, lettuce, sprouts etc
1 Kiwi - cubed
1/2 Avocado - cubed
1 tsp Lemon juice
Pepper to taste
2tsp Balsamic Vinegar (optional but taste better when added)
Lightly toss all ingredients in a salad bowl. The Kiwi and Avo will be slightly mashed and be mixed in with the other ingredients creating a "natural" dressing. Avo brings a creamy texture and the Kiwi brings sweetness and a slight tangy taste to the salad.

Homemade Goodness...Its the first time I made pumpkin soup today. Infact i was never a fan of pumpkin stuff.
The first time i had this soup here is when I bought one canned of Heinz pumpkin soup. It taste salty and too sweet for my liking. And that time i went marketing and saw Butternut Pumpkin going for $1. We bought one and tried, it was much yummier then the canned soup for sure :)
Recipe: Creamy Pumpkin Soup
Serves 3-4
- Chop half a pumpkin into cubes and bring to boil till soft
- Pour off 1/4 of the water in the pot when it starts to get soft
- And transfer remaining water into a large bowl
- Using a potato masher, mash pumpkin into pulp
- Seive it to get the squashy stuff (the remaining pulp can be used to make fritters)
- Combine squashy stuff with water in the large bowl and stir
- In ANOTHER pot, fry half an onion (finely diced) and a teaspoon of garlic. Add a pinch of curry powder/chilli powder/ paprika and a sprinkle of herbs.
- Pour in soup mixture and stir well
- Pour in 3 tbsp of cream and salt and pepper to taste

It was pure darkness to the car, but when we looked up, the sky was sparkling with like a million stars. So pretty!! They are so bright as well. And as the house was on a hill top... we had the bird's eye view of the city from afar, with bright lights lighting up the city. So pretty. Nv get that in SG for sure.
